Nan Xiang is a PhD student in Anthropology. He is currently developing the concept of cuisine ideologies, which refers to ideas and feelings about cooking articulated through culinary discourse and, more importantly, those that are not overtly expressed but are embedded in patterns of cooking practice. He explores this concept through ethnographic apprenticeship in the professional kitchens of Australian restaurants shaped by immigrant food cultures.
